Victoria's Perfect First Courses to Serve a Crowd

Vodka Shrimp served with Red Chili Piri Piri 

Delicious, easy to make and elegant cold first courses set the right tone for your dinner party. Our version of the Shrimp Cocktail is served with our spicy Red chili Piri Piri in a cordial (what a fantastic way to use those glasses) and is garnished with a sprig of celery. We add a splash of vodka and get the party rolling! 

Pink Shrimp & Avocado Salad with Red Chili Piri Piri and Roasted Garlic Mayonnaise

Toss cooked shrimp and cubed avocado with our special Pink Sauce and serve garnished with micro greens over a bed of lettuce. To make our Pink Sauce, mix together equal measurements of Red chili Piri Piri and Roasted Garlic Mayonnaise. Chill until ready to serve. 

Avocados filled with Tabbuleh salad topped with Red Chili Piri Piri are deliciously perfect. Tabbuleh is a favorite but really, any other green salad would work as well. Use both spoon and fork when setting the table and pass extra piri piri on the side. 

Crab & Lobster Salad with Classic Lemon Mayonnaise, Avocado and Poached Egg. Or, if you want to splurge use shrimp salad or even a delicious white and creamy potato salad. Make the eggs ahead of time so that they are cold when they are served and cook them for exactly 6 minutes so that they are just runny. Avocado slices make the perfect "cage" for this salad. Serve with extra Classic Mayonnaise on the side.  

Fish Cakes with Fine Herb Mayonnaise are perfect for a large group. Keep them in a warm oven until ready to serve on a bed of lettuce. I like to add a few tablespoons of the Fine Herb Mayonnaise to the mixture before cooking to add creaminess and extra flavor.
