Our meatloaf, made with both Champagne and Smokey BBQ Ketchups is moist, flavorful and oh so delicious. We make it using all ground beef but also love it mixing turkey and veal if you like.
2 tablespoons olive oil
2 cups of onion, diced
2 large cloves of garlic, minced
3 lbs ground beef
1 small brioche loaf, cubed
1 jar Victoria Amory Champagne Ketchup
1 large egg, beaten
1 lb bacon
1 jar Victoria Amory BBQ Ketchup
Salt & Pepper
Pre-heat the oven to 350 degrees.
In a sauce pan, sauce the onions and garlic with the olive oil until soft.
In a bowl mix together with your hands the beef, brioche, champagne ketchup and egg. Season generously with salt and pepper.
Form the meatloaf on a baking tray and spread the Smokey BBQ Ketchup all over the loaf. Wrap the bacon on top and around it and bake for about 1 hour or until done (no longer pink inside and the bacon crispy).
Rest for about 10 minutes and slice serving more champagne ketchup on the side.
