Shrimp Louie Salad
A Thousand Island dressing made from our gourmet mayonnaise and ketchup is a failproof way to elevate your greens. Combined with the winning flavors of sautéed shrimp, creamy avocado and hardboiled egg you have a salad packed with fresh flavor!
Thousand Island Dressing:
1 jar classic lemon mayonnaise
¼ cup champagne ketchup
1 teaspoon fresh lemon juice
2 tablespoons minced cornichon
1 tablespoon minced sweet onion
1 clove minced garlic
Sea salt and freshly cracked pepper to taste
Shrimp Louie Salad:
2 tablespoons butter
1 clove garlic
½ lb. jumbo shrimp, cleaned
1 head Boston bib lettuce, cleaned and roughly chopped
1 Persian cucumber, sliced
2 hardboiled eggs, peeled and quartered
1 avocado, diced
8 grape tomatoes, halved
In a small bowl, combine the ingredients of the Thousand Island dressing and season to taste with sea salt and freshly cracked pepper. Refrigerate the dressing until you’re ready to serve.
In a medium-sized frying pan, add butter and garlic and sauté for 1-2 minutes until you can smell the garlic. Remove the garlic with tongs and discard then add your shrimp and cook until just pink (about 3 minutes). Set shrimp aside as you arrange your salad plates.
On two plates, arrange lettuce and then top with cucumber, egg, avocado and tomatoes. Top with sautéed shrimp and dress to taste with Thousand Island dressing.
