Mixed Seafood with Almond and Garlic Romesco Sauce

Serves 4

We’re all about effortless entertaining this summer! And what could feel more like summer than a platter of fresh seafood with all the flavors of the Spanish seaside? Best yet, this is a meal that’s ready in under 5 minutes.

Ingredients:

6 tablespoons butter

2 garlic cloves, thinly sliced

2 lbs. mixed seafood (mussels, clams, prawns and calamari work well)

2 tablespoons chopped fresh parsley

Almond and Garlic Romesco Sauce

Method:

In a large sauté pan, heat the butter and garlic over medium heat until the garlic is soft but not browned (about 2-3 minutes). Increase the heat and add all the seafood. Cook for a couple of minutes until just cooked through. Be sure to remove any clams or mussels that didn’t open. (do you think it needs a minute to steam with lid on for clams and mussels?)

Transfer to a platter and sprinkle with fresh parsley. Serve with Almond and Garlic Romesco saucefor dipping.
