Green Chili Piri Piri Beef Skewers

Green Chili Piri Piri Beef Skewers

Makes 6 large kabobs

Sweet summer corn and piri piri beef all in one kabob! These are an ideal recipe for end of Summer BBQs.

2 ears of sweet corn, boiled and cut into 1 ½ inch rounds

1 ¼ lb. sirloin, diced into 1x1 inch cubes

Sea salt and freshly cracked pepper

1 jar Green Chili Piri Piri Sauce

1 yellow pepper, cut into 1x1 inch pieces

1 small red onion, sliced into 1x1 inch pieces

1 small zucchini, sliced into 1 inch rounds

Preheat your grill to medium-high. Take this time to boil your 2 ears of corn. Set aside corn after cooking.

Season sirloin with salt and pepper and marinate in ½ jar of Green Chili Piri Piri Sauce for at least 10 minutes.

Assemble your skewers (metal skewers are best for cooking and don't require soaking, just be sure to remove with tongs). It is prettiest to assemble a mixed kabob but easiest for cooking to make kabobs of like ingredients since all vegetables and the sirloin grill at different times.

Grill sirloin skewers 2-3 minutes per side until you reach desired doneness. Grill pepper and onion 4-5 minutes on each side or until tender. Grill zucchini 7-10 minutes on each side or until tender. Grill corn 4-5 minutes or until you see char marks. Brush everything from the grill with the remaining ½ jar of Green Chili Piri Piri Sauce.

Serve on a large platter and allow everyone to help themselves or re-assemble into mixed kabobs.
