Chocolate Cupcakes (with Classic Lemon Mayonnaise)
Makes 12 cupcakes
Do not let the name fool you; this recipe makes for the most moist, rich and delicious cupcakes. Remember mayonnaise is mostly made of egg, which makes it a wonderful surprise ingredient in these delectable chocolate cupcakes.
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon baking powder
2 medium eggs
¾ cup sugar
½ tsp. vanilla extract
½ cup Classic Lemon Mayonnaise
½ cup water
Preheat oven to 350°. Fill cupcake pans with liners and set aside.
In medium bowl, mix flour, cocoa powder, baking soda and baking powder. In large bowl, with electric mixer at high speed, beat eggs with sugar and vanilla for 3 minutes or until light and fluffy. Beat in Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared cupcake tins.
Bake 25-30 minutes or until toothpick inserted in centers comes out clean. Cool for 10 minutes in tins then remove to a wire wrack to finish cooling. Ice if you like with chocolate icing and finish with chocolate sprinkles. The cake is delicious on its own as well.
